Beat the afternoon slump with these date and almond balls and power on!
They’re next level delicious, take just a few minutes to come together and will last for at least a week – that’s if you can resist eating them all at once!
What you need:
1 cup (160 gms) medjool dates
1/2 cup (80 gms) almonds
2 tbsp cocoa powder
1 tsp cinnamon powder
1/4 tsp vanilla essence
1/4 tsp pink Himalayan salt
1 tbsp desiccated coconut – for coating
How to:
Chop the almonds in to small, bite sized pieces.
Toast in a pre-heated oven at 180 degrees cetigrade for 7-8 minutes until golden.
De-seed the dates and mash them until smooth using a potato masher.
Add the cocoa powder, cinnamon, vanilla and salt to the dates and combine well.
Finally, add the toasted almonds and divide the entire mixture in to eight equal parts. Shape in to smooth balls and roll them in desiccated coconut.
