Making cheat day treats healthy enough to eat every day!
On a recent trip to JW Marriott, Mussoorie, I had the chance to sample some incredibly delicious and healthy indigenous ingredients. My favourite discovery was the local millet flour, simply because of how much you can do with it. We had some incredible pastas and thin and crispy pizzas at their vegan friendly restaurant which their chef, Chef Simran did for us. Befriending him had the perk of me getting a box full of samples of these local ingredients to take back! 🙂
After coming home to my kitchen, these Double Chocolate pancakes were my first experiment with the flour and I was so pleased with the result! They’re beyond delicious! And my favourite part is how much more filling they are than regular pancakes. Two small ones and you might even forget to eat lunch!
Makes 4 small pancakes
What you need:
Dry ingredients:
5 tbsp FAB millet flour (a mix of foxtail millet, amaranth and barnyard millet)
– if you can’t find these millets, replace with any other flour
1 tbsp cocoa powder
- total 1/2 cup dry measure
1/2 tsp sugar
1/8 tsp salt
1/2 tsp baking powder
1/4 + 1/8 tsp baking soda
Wet ingredients:
1/4 cup vogurt
1/4 cup water
1 tbsp coconut oil
1/4 tsp vanilla extractÂ
Additional ingredients:
1/4 cup dark chocolate chips
Butter – to cook the pancakes
Toppings – sliced bananas, granola, nuts (optional)
Honey
How to:
Combine the dry ingredients in a mixing bowl and mix it thoroughly.
In a separate bowl, combine the yogurt (bring it down to room temperature), water, coconut oil and vanilla extract. Wisk this well.
Add the dry ingredients to the wet and stir until just combined and you no longer see any wisps of flour. Do not overmix the batter.
Cover the batter and leave it to rest for about 15 minutes.
Bring a non-stick pan up to medium heat.
Grease with a little butter and drop about a quarter cup of batter to make each pancake.
Drop down a few chocolate chips in to pancake.
You will see small bubbles forming on the surface.
After a couple of minutes, flip over and cook on the other side for just a minute more.
Top with more chocolate chips, sliced bananas, granola or anything else you have lying around.
Drizzle with honey or maple and enjoy!
