What you need:
1 large mango
1/2 cup fresh blueberries
1/4 cup tender coconut meat
For the coconut cream oatmeal:
1 1/2 cup water
1/2 cup jumbo oats
1/2 cup thick coconut milk
2 tbsp white granulated sugar or sweetener of choice
Salt – pinch
For the toppings:
1 tbsp hemp seeds
Fresh baby basil
Boil the water with a pinch of salt.
Add the oatmeal and cook covered, until the water evaporates, on a very low flame.
Once the oatmeal is cooked, combine with coconut cream and sugar. Leave to chill in the refrigerator.
Chop the mango in to cubes or use a melon baller. Chop the tender coconut meat in to small cubes. These little chunks of coconut make all the difference!
Spoon out the coconut oatmeal in a smoothie bowl. Top with the fresh fruits, coconut, hemp seeds and basil.
