Still obsessing over all things Japanese, here’s a delicious matcha chia pudding recipe you can whip up in minutes for a satiating breakfast or to put down those mid-day cravings. You’re gonna love it so matcha, you’ll be making it on repeat!
What you need:
1 cup coconut milk
¼ cup chia seeds
4 tbsp coconut Monin syrup/4 tbsp sweetener of choice
1 tsp matcha
For the topping:
1/2 cup Greek yogurt
1/2 cup mixed berries
Micro herbs/fresh mint
How to:
Wisk the matcha back and forth in very little warm water until frothy and smooth.
Combine with the coconut milk and syrup.
Transfer to a mixing bowl.
Add the chia seeds and stir.
Cover and rest in the refrigerator for a minimum of two hours, up to overnight to firm up to a pudding consistency.
Transfer to serving pots or glasses, top with Greek yogurt and berries!
