A gorgeous flatbread loaded with fresh, natural ingredients and a whole lot of goodness!
I believe the Mediterranean diet is the best way to un-diet yourself! Naturally, a clean eater, I adopted the Mediterranean diet by default years ago. And by far, I feel the best when I eat this way and it’s no wonder the Spaniards have been voted as the healthiest people on the planet!
Typical to the Mediterranean diet, I love eating large bowls of salads loaded with crunch greens and brightly coloured veggies, doused in olive oil and topped with large handfuls of nuts. It’s important to understand that this diet is not low-calorie but nutrient-dense and also quite delicious. And the best part about this diet is it allows me to indulge in that occasional glass of red wine.
I hope you enjoy recreating this gorgeous Mediterranean style flatbread I made out of my Airbnb kitchen last summer in Italy!
What you need:
1 piece store-bought whole grain flatbread
1/4 cup ricotta
1 nectarine – cut in to segments
5-6 pieces of vegan mortadella (or regular mortadella)
1/2 cup arugula leaves
A handful of walnuts – toasted
2 slices of a lemon – cut in to quarters
1 tbsp extra-virgin olive oil
1 tsp balsamic vinegar
Sea salt
How to:
Toast the flatbread in a hot oven (about 180 degrees centigrade) for about ten minutes
Apply a generous layer of ricotta
Top with the nectarines, mortadella, arugula, walnuts and fresh lemon
Drizzle with olive oil, balsamic vinegar and a good cracking of sea salt
Remember to share it with someone you love

Chef notes:
– if you can’t find nectarines, oranges work as a great substitute
– any kind of ham can work in place in place of the mortadella if you can’t find it at your local deli
