Incredibly creamy hummus with a slight smoky flavour!
What you need:
For the hummus:
1 cup cooked chickpeas (1/2 cup uncooked)
1⁄2 cup Greek yogurt
2 tbsp unpolished white sesame seeds
2 tbsp extra virgin olive oil
1/4 cup extra virgin olive oil (additional and optional) 1 T lemon juice
1 tsp crushed garlic
1 green chilli
1 tsp smoke powder
1 tsp sea salt
For the topping:
1 tbsp EVOO
1 tbsp cooked chickpeas
1/4 tsp sumac
1/2 tsp sesame seeds

How to:
In a small blender, grind the sesame seeds, garlic and green chilli to a paste consistency. Add the olive oil and some of the yogurt and emulsify by grinding further.
Take this mix out in a bowl.
In the same mixer, grind the chickpeas to a smooth paste. Add the sesame seed mix and the balance yogurt and grind until smooth.
Season with sea salt and the smoke powder.
Chill in the refrigerator for a couple of hours, at the least, for the flavours to develop.
Top generously with EVOO. Add a sprinkle of sumac. Top off finally with some cooked chickpeas, a touch of sesame and some edible flowers.
